ethiopian food
I am really starting to enjoy Ethiopian food. We have eaten at two Ethiopian restaurants, and had the privilege to enjoy two home-cooked meals. Both of the home-cooked meals have been amazing! A few basics on Ethiopian food for those that haven't been able to sample it yet:)
Injera is a spongy, tart flatbread that Ethiopians use at each meal. You do not eat with utensils, but use injera to pick up the food and eat with your fingers. Ethiopian food is also very spicy. They use a special spice blend called berere in much of the food- it gives the food a red color. Vegetables and meat dishes are both very common. Ok, I said it was basic- you should really just go try some for yourself.
This first picture is from our DFW area/Ethiopian adoption/get-together! We really should get a name for our group, the clever folks in Southern Cal are OCEAN. (Orange County Ethiopian Adoption Network) so lets get creative. :) This group has been a blessing, and we look forward to more gatherings in the future. (January 18th, our house) This is the Newsome's, Funderburk's and Fournet's- we all can't wait to rejoice with one another over referrals and homecomings.
We also had the wonderful opportunity to join one of Moody's patients families for a Christmas celebration today. The Ethiopian Christmas is tomorrow. The food was incredible, and they all made us feel like part of the large family. Everyone was so hospitable and gracious. We look forward to getting to know them all better in the future.
If you look closely at the table, you will see a plate of pizza rolls:) The girls haven't acquired a taste for Ethiopian food yet!

So thankful for all of you in the metroplex that we can connect and share life with on a regular basis. We definitely need a fun name for the group. Thanks for posting the pic:) Praying for that phone to ring!
Yay!! A post! I'm checking on here several times a day!!! What a wonderful chance you've had to get together with other folks in your area - how long do you think it would take to get to TX fro NH?? Over an hour?? It may be worth the trek!! MP and I really need to try the food again - I liked it, and can really see how it grows on people. So, I'll mark the 18th on my calendar, please set two more places! :)
That is so amazing! To have a group to support you and know what you are going through and also for friends who can teach you about the Ethiopian Culture and be an extended family. I love reading your blog and hoping/praying for a referral for you soon!
We are living in England for my husband job assignment for 3-5 years one year gone but we want to stay as long as we can- we love it here!

Yea! I'm thrilled that you guys are enjoying an edifying group of other adoptive families. We just had dinner last night with another family here, and I'm so grateful for the fellowship and support. It makes a world of difference. I wish we lived a short drive away so we could get together occasionally, too!

I am glad you posted as I enjoy reading your blog. You inspired me to look up some Filipino recipes. I am thinking that I will definitely be fixing up a plate of pizza roles to go along with the meal. I wish I could blame it on the kids...if only I weren't such a picky eater. :)
Beautiful pictures! I love learning about Vietnamese food--it is such a wonderful way to incorporate your kids' birth country's culture into your family. When we were considering Ethiopia I read a lot of recipes--never was brave enough to try injera though. It all sounds yummy.
And very cool you have families in your area to share the journey with--I wish we did!
